When I'm trying to install the wiki there's always this error:

Well, try to read the text that's present in front of you :)

Your webserver probably hasn't PHP installed, or it hasn't been enabled on the webserver, or it isn't associated to .php files.

Your web server is not configured to run php on php files apparently.

Well, the year is 2023 and I have the same issue with Mediawiki 1.39.3 on PHP 8.1.2. My Apache is configured to run PHP...

Anyone can give an answer to this question?

This is not a mediawiki issue. Ensure php is installed and consult the documentation for your webserver.
