The extension page mentions the variable $wgMFDefaultSkinClass five times.

However, the master and 1.35.0 MobileFrontend documentation (README.md & extension.json) do not mention that variable. Instead, that documentation includes the variable $wgDefaultMobileSkin. The stated default value for $wgDefaultMobileSkin is "minerva".

Is the extension page text outdated or is the variable $wgMFDefaultSkinClass still operative? If so, what is its effect and how does it differ from $wgDefaultMobileSkin.

The extension page is outdated. As a rule of thumb, consider any documentation on this wiki as outdated unless you already knew it's not or it matches the doc in the source or the autogenerated one in https://doc.wikimedia.org/.
