I have just realized that inserting a mistyped category name can not be trapped by the preview function because in preview categories name are always blue. (note:should it matter, I'm editing on it.wiki)

In the visual editor, adding categories via the related tool will immediately show you whether it exists or not: its title will show in red if the related page doesn't exist, and in black if it does.
Ciao Elitre, I believe we are not talking about the same VE. I'm talking about the new VE which has recently replaced the editor for text mode. With such editor, the categories, in the preview mode, are shown in blue regardless they exist or not.
(That's the 2017 wikitext editor, and it has its own feedback page! ;) No problems, I'll reply later bearing in mind that you're talking about that.)
