I have noticed that many graphs are useful for the topic I am trying to teach, while others are less important for an individual plan. It would be nice if we could select which embedded graphs/tables we wanted to keep, minimizing paper waste in the event we wish to print the PDF afterwards. LaTeX is a pain to work with.

That seems like a very limited usecase, that can easily be solved with a "Save as pdf" and then using a PDF editor.
Do not work at all "save as pdf". The first page ("Nernst" in English) has got only. Software , hardware , personal failure ?

Agreed ! I could certainly use formatting that allows me to put wikipedia tables straight into Excel, so I can restructure the contents to make it useful. Maybe this already exists though and I dont know how to do it. It's not stupid-proof, at least of that I am sure.
In Excel, if you goto Data, Get Data, From Web, then paste the URL, you can edit from there. :)
